Classic EASY Crockpot Potato Soup with Bacon & Chives

This classic crockpot potato soup recipe is incredibly easy to make and features tender potatoes, savory bacon, and fresh chives for a comforting meal the whole family will love.

  • 2 lbs Yukon Gold or Russet potatoes peeled and diced into 1-inch cubes
  • 1 medium yellow onion chopped
  • 2 stalks celery chopped
  • 4 cups chicken or vegetable broth low-sodium
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried thyme
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup milk or half-and-half full-fat recommended
  • 0.5 cup sour cream

Optional Garnishes

  • 0.5 cup shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 2 tbsp fresh chives or green onions chopped

  • Peel and dice potatoes, chop the onion, and slice the celery.
  • Place the diced potatoes, chopped onion, and celery into your slow cooker.
  • Pour in the broth and season with garlic powder, onion powder, dried thyme, salt, and pepper.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until potatoes are fork-tender.
  • Stir in the milk (or half-and-half) and sour cream until well combined.
  • Mash some potatoes for a chunkier soup, or blend half or all of the soup for a smoother consistency.
  • Taste and adjust salt and pepper if needed.
  • Ladle into bowls and serve hot, with optional cheddar cheese, bacon, and chives.

Notes

For a richer flavor, consider using full-fat milk or half-and-half. Adjust seasoning to your preference. If you don't have an immersion blender, carefully transfer soup batches to a regular blender and blend until desired consistency, then return to the slow cooker.
