Meatloaf

  • 2 lbs ground beef 80/20 lean
  • 1 cup breadcrumbs plain or panko
  • 1/2 cup milk whole or 2%
  • 2 large eggs lightly beaten
  • 1 onion finely chopped
  • 2 garlic minced
  • 1/2 cup ketchup divided
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste

Glaze

  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish or line a baking sheet with parchment paper.
  • In a large bowl, whisk together the milk and eggs.
  • Stir in the chopped onion, minced garlic, 1/4 cup of ketchup, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper.
  • Add the ground beef and breadcrumbs to the bowl, then gently mix everything together using your hands until just combined.

Cooking

  • Form the meat mixture into an oval-shaped loaf in your prepared baking dish or on the baking sheet.
  • In a small bowl, whisk together the remaining 1/4 cup ketchup, brown sugar, and apple cider vinegar to create the glaze.
  • Spread the glaze evenly over the meatloaf. Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).

Resting

  • Once cooked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing to ensure it is moist and flavorful.
