  • 4 large eggs at room temperature
  • 1/2 cup milk whole milk recommended
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons unsalted butter

  • Place a 9 or 10-inch oven-safe skillet in a cold oven, then preheat to 425°F (220°C). Once hot, add 2 tablespoons of butter to the pan and let it melt completely, swirling to coat the bottom and sides.
  • While the butter melts, whisk together the eggs, milk, flour, and salt in a medium bowl until the batter is smooth and lump-free.
  • Carefully remove the hot pan with melted butter from the oven and pour the batter directly over the melted butter.
  • Return the pan to the hot oven and bake for 15-20 minutes, or until the pancake is dramatically puffed, golden brown, and slightly set.
  • Remove from the oven, slice into wedges, and serve immediately with your favorite toppings.

Notes

For best results, ensure your eggs are at room temperature before mixing the batter. The pancake will deflate quickly after coming out of the oven, so have your toppings ready!
