  • 1 medium Onion chopped
  • 2-3 Garlic minced
  • 1-2 tablespoons Olive Oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 cups mixed vegetables e.g., chopped bell peppers, zucchini, spinach
  • 1 cup chicken broth or diced tomatoes or 1 can (14.5 oz) diced tomatoes, undrained

Cooking Steps

  • Chop the onion and bell peppers, then mince the garlic. Prepare any other quick-cooking vegetables like spinach.
  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground turkey, breaking it up, and cook until browned.
  • Carefully tilt the skillet and drain any excess fat.
  • Add chopped onion to the skillet and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  • Add chosen vegetables, salt, pepper, and Italian seasoning. Sauté for 3-5 minutes until slightly softened.
  • Pour in chicken broth or diced tomatoes and stir to combine.
  • Bring to a gentle simmer, then reduce heat to medium-low, cover, and cook for 5-10 minutes until vegetables are tender-crisp and sauce thickens.
  • Taste and adjust seasonings as needed. Serve hot directly from the skillet.

Notes

This recipe is highly adaptable. Feel free to use your favorite vegetables or add a pinch of red pepper flakes for a little heat. For a creamier sauce, stir in a dollop of cream cheese or a splash of heavy cream at the end.
