Meatloaf

  • 1 ½ pounds ground beef (80/20 lean-to-fat ratio)
  • ¾ cup plain or Panko breadcrumbs
  • ½ cup milk
  • large egg
  • ½ cup finely diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Ketchup Glaze

  • ¾ cup ketchup divided
  • 2 tablespoons brown sugar divided
  • 1 tablespoon apple cider vinegar divided

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or foil.
  • In a small bowl, combine the breadcrumbs and milk; let it soak for 5 minutes to absorb the liquid.
  • In a large mixing bowl, gently combine the ground beef, soaked breadcrumbs, egg, onion, garlic, Worcestershire sauce, salt, and pepper, being careful not to overmix.
  • Shape the mixture into a 9x5 inch loaf on the prepared baking sheet.
  • Whisk together half of the ketchup, brown sugar, and apple cider vinegar and spread this initial glaze over the meatloaf.
  • Bake for 45 minutes.
  • Prepare the remaining glaze by whisking the rest of the ketchup, brown sugar, and apple cider vinegar. After 45 minutes, spread the second layer of glaze over the meatloaf and return it to the oven for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for at least 10 minutes before slicing to ensure it is moist and tender.

Notes

Overmixing the meatloaf can make it tough, so be gentle when combining ingredients. Always let the meatloaf rest after baking to allow the juices to redistribute, resulting in a more tender and flavorful dish.
