  • 6-8 slices Stale Bread cubed (challah, brioche, or plain white bread)
  • 4 Large Eggs
  • 1 ½ cups Milk (dairy or non-dairy)
  • ¼ cup Granulated Sugar plus 1 tablespoon for sprinkling
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Cinnamon
  • 1 cup Berries fresh or frozen (blueberries, raspberries, or mixed)

Optional

  • Chopped nuts or maple syrup for serving

Instructions
 

Preparation

  • Cut stale bread into 1-inch cubes and evenly distribute them in a lightly greased 8x8 inch baking dish.
  • In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon until smooth.
  • Pour the egg mixture over the bread cubes, pressing gently to ensure all pieces are submerged.
  • Scatter fresh or frozen berries over the top, gently nestling some into the bread mixture.

Chill and Bake

  • Cover the baking dish tightly with plastic wrap and refrigerate for at least 8 hours or overnight.
  • The next morning, preheat your oven to 375°F (190°C), remove the plastic wrap, and sprinkle the remaining tablespoon of sugar over the top if desired.
  • Bake for 35-45 minutes, or until the top is golden brown, the center is set, and the bake is puffed up.

Serving

  • Let it cool for a few minutes before slicing and serving warm with optional chopped nuts or maple syrup.

Notes

For best results, use slightly stale bread as it absorbs the custard mixture better. You can prepare this bake up to 24 hours in advance. Feel free to experiment with different types of berries or even a mix of fruits.
