Potatoes

  • 2-3 pounds Potatoes (Yukon Gold or Russet) peeled and thinly sliced (about 1/8 inch thick)

Sauce

  • 1/4 cup Vegan Butter
  • 1/4 cup All-Purpose Flour
  • 3 cups Unsweetened Plain Plant-Based Milk almond, soy, or oat milk
  • 1/4 cup Nutritional Yeast
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black Pepper or to taste

  • Fresh Parsley for garnish

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Slice the peeled potatoes uniformly to about 1/8 inch thick using a mandoline or sharp knife.

Make the Sauce

  • Melt the vegan butter in a medium saucepan over medium heat, then whisk in the flour for 1-2 minutes until a pale roux forms.
  • Gradually whisk in the plant-based milk and continue whisking over medium heat for 5-7 minutes until the sauce thickens.
  • Remove the sauce from heat and stir in the nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper; taste and adjust seasonings.

Assemble and Bake

  • Arrange one-third of the sliced potatoes in an even layer in the baking dish, then pour and spread one-third of the creamy sauce over them.
  • Repeat the layering two more times, ensuring the top layer is generously covered with sauce.
  • Cover the baking dish tightly with aluminum foil and bake for 40 minutes.
  • Remove the foil and bake for an additional 20-30 minutes, until the potatoes are fork-tender and the top is golden brown and bubbly (broil for 1-2 minutes for extra crispiness, if desired).

Serve

  • Let the scalloped potatoes rest for 5-10 minutes before serving, and garnish with fresh parsley if desired.

Notes

For best results, slice potatoes as uniformly as possible to ensure even cooking. If you don't have a mandoline, take your time with a sharp knife.
