  • 1 tbsp olive oil
  • 1 lb breakfast sausage cooked and crumbled
  • 1 medium onion chopped
  • 1 bell pepper any color, chopped
  • 6 slices stale bread cubed
  • 1 ½ cups shredded cheddar cheese
  • 12 large eggs
  • 1 ½ cups milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • fresh parsley for garnish

Preparation

  • Grease a 9x13 inch baking dish with olive oil and scatter the cubed stale bread evenly on the bottom.
  • In a large skillet, cook the breakfast sausage until browned; drain excess fat. Sauté chopped onion and bell pepper until tender-crisp, then sprinkle the cooked sausage, onion, and bell pepper over the bread in the baking dish.
  • Evenly sprinkle 1 cup of the shredded cheddar cheese over the sausage and vegetable mixture.
  • In a large bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • Carefully pour the egg mixture over all ingredients in the baking dish, ensuring the bread is well saturated and all ingredients are submerged. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.

Baking & Serving

  • Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 20-30 minutes.
  • Uncover the casserole and sprinkle the remaining ½ cup of shredded cheddar cheese over the top. Bake for 45-55 minutes, or until the center is set and the top is golden brown.
  • Let the casserole rest for 5-10 minutes before slicing and serving. Garnish with fresh parsley if desired.

Notes

For best results, prepare the casserole the night before so the bread has ample time to soak up the egg mixture. This makes for a more tender and flavorful breakfast casserole.
