  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano (or thyme/rosemary)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

  • 1 lemon, sliced
  • 1 fresh parsley, chopped (for garnish)
  • 2 tablespoons soy sauce or Worcestershire sauce

Preparation

  • Pat the chicken thighs dry with paper towels.
  • Combine paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl. Drizzle chicken with olive oil and rub with the seasoning mixture; add soy sauce or Worcestershire if using.

Marinating & Cooking

  • Let the seasoned chicken sit at room temperature for 30 minutes, or refrigerate for at least 2 hours, bringing it to room temperature before cooking.
  • Preheat your oven to 400°F (200°C).
  • Heat an oven-safe skillet with olive oil over medium-high heat, then sear chicken thighs skin-side down for 5-7 minutes until golden brown and crispy, cooking in batches if needed.
  • Flip the chicken thighs to be skin-side up, add lemon slices around them if desired, and transfer the skillet to the preheated oven.
  • Roast for 20-30 minutes, or until the internal temperature reaches 175°F (80°C) and juices run clear.

Serving

  • Remove chicken from the oven, tent with foil, and let rest for 5-10 minutes; garnish with fresh parsley before serving.
