Equipment

  • Large oven-safe skillet
  • Paper towels

Ingredients

Main Ingredients

  • 4 Salmon fillets (about 6 oz each), skin-on or off, wild-caught if possible.
  • 2 tablespoons Olive Oil
  • Salt To taste
  • Black Pepper To taste
  • 3 cloves Garlic minced
  • 1 Lemon juiced and zested
  • 2 tablespoons Fresh Herbs chopped (e.g., dill, parsley, chives)
  • 1 bunch Asparagus woody ends trimmed, cut into 1-inch pieces

Instructions

Cooking Steps

  • Pat the salmon fillets dry with paper towels and season generously with salt and pepper.
  • Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  • Place salmon fillets in the skillet, skin-side down if applicable, and sear for 4-5 minutes until golden brown and crispy; sear skinless salmon on one side for 3-4 minutes until browned.
  • Carefully flip the salmon fillets.
  • Add asparagus around the salmon in the skillet.
  • Sprinkle minced garlic and lemon zest over the salmon and asparagus, then squeeze fresh lemon juice over everything.
  • Continue to cook for 5-8 minutes, or until the salmon is cooked through and the asparagus is tender-crisp.
  • Stir in fresh herbs just before serving.

Notes

For extra flavor, marinate the salmon in lemon juice and a pinch of salt and pepper for 15 minutes before cooking. Adjust cooking time based on the thickness of your salmon fillets; thinner fillets will cook faster than thicker ones.
