  • 3 cups cooked day-old white or brown rice
  • 1 tablespoon neutral oil (vegetable, canola, or avocado)
  • 2 garlic, minced cloves
  • 1 fresh ginger, grated or minced inch
  • 1/2 onion or scallions (white parts only), sliced
  • 1/2 cup diced carrots
  • 1/2 cup small broccoli florets
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 cup fresh spinach, roughly chopped
  • 2 large eggs, lightly beaten (optional protein)

For the Sauce Mixture

  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon rice vinegar (optional)
  • 1/2 teaspoon sugar or maple syrup
  • 1/4 teaspoon white or black pepper

  • Chop all vegetables, mince garlic and ginger, and prepare the sauce mixture in a small bowl; if using eggs, lightly beat them.
  • Heat a large wok or skillet over high heat with oil, then stir-fry garlic, ginger, and scallion whites for 30 seconds until fragrant.
  • Add carrots and broccoli to the pan and stir-fry for 2-3 minutes until slightly softened.
  • Stir in bell peppers, frozen peas, and corn; if using eggs, scramble them in the pan before mixing with vegetables, then add spinach and stir until wilted.
  • Add cold, cooked rice to the pan, breaking up clumps, and stir-fry for 3-5 minutes until some grains are crispy and golden.
  • Pour the sauce mixture over the rice and vegetables, stirring vigorously for 1-2 minutes to coat everything evenly and heat through.
  • Taste and adjust seasoning as needed, then garnish with green scallions if desired.

Notes

For best results, use day-old rice as it tends to be drier and fries up better. Feel free to customize with your favorite vegetables or protein. Adjust soy sauce to taste, especially if you prefer more or less salinity.
