  • 1 large English cucumber sliced into ½-inch rounds
  • 8 oz block feta cheese cut into ½-inch cubes
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives pitted
  • Small bamboo skewers or toothpicks
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Freshly ground black pepper to taste

Instructions
 

Preparation

  • Wash and dry the English cucumber, then slice it into ½-inch thick rounds.
  • Carefully cut the feta cheese block into ½-inch cubes.

Assembly

  • Thread a cucumber round, cherry tomato, feta cube, and Kalamata olive onto each skewer, repeating for a balanced look.

Finishing

  • Arrange the assembled skewers on a platter, then drizzle with olive oil.
  • Sprinkle with dried oregano and black pepper to taste.
  • Serve immediately or refrigerate for at least 30 minutes to chill and crisp the cucumber.
