Ingredients
  

Main Ingredients

  • 1 block Feta Cheese firm, preferably packed in brine, cut into approximately 1-inch cubes
  • 1 Cucumber English or Persian, sliced into thick rounds, half-moons, or 1-inch chunks
  • 1 cup Cherry Tomatoes halved or whole
  • 0.5 cup Kalamata Olives pitted
  • 0.25 small Red Onion thinly sliced or small chunks (optional)

Garnish & Dressing

  • 2 tablespoons Fresh Mint or Oregano chopped
  • 1 tablespoon Extra Virgin Olive Oil for drizzling
  • Black Pepper A pinch (optional)

Instructions
 

Preparation

  • Drain the feta and pat it dry, then cut it into 1-inch cubes. Wash and slice the cucumber; you can peel it or leave the skin on for added color and nutrients. Halve the cherry tomatoes if preferred.

Assembly

  • Thread the prepared ingredients onto the wooden skewers in an alternating pattern, such as feta, cucumber, cherry tomato, olive, then repeat. Feel free to arrange the ingredients creatively.

Serving

  • Arrange the assembled skewers on a platter. Drizzle them lightly with extra virgin olive oil and sprinkle with fresh chopped mint or oregano. Add a pinch of black pepper if desired, then serve immediately or chill for up to 30 minutes to allow the flavors to meld.

Notes

For best flavor, use high-quality feta cheese packed in brine. Adjust the amount of red onion to your preference, or omit it if you prefer a milder flavor. These skewers are also great with a squeeze of lemon juice before serving.
