Main Ingredients

  • 1.5-2 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1.5 cups uncooked long-grain white rice not instant
  • 1 medium yellow onion
  • 2 cloves garlic

Sauce

  • 10.5 oz cream of mushroom soup
  • 10.5 oz cream of chicken soup
  • 1.5 cups chicken broth
  • 1 cup milk whole or 2%
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp dried thyme

Optional

  • 1 cup frozen mixed vegetables peas and carrots work well
  • fresh parsley chopped, for garnish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Spread the uncooked rice evenly in the baking dish, then scatter the chopped onion and minced garlic over the rice.
  • Arrange the cut chicken pieces over the rice mixture.

Assemble and Bake

  • In a large bowl, whisk together the cream of mushroom soup, cream of chicken soup, chicken broth, milk, salt, pepper, and dried thyme until smooth; stir in frozen mixed vegetables if using.
  • Carefully pour the liquid mixture evenly over the chicken, rice, and vegetables in the baking dish, making sure not to stir.
  • Tightly cover the baking dish with aluminum foil and bake for 50-60 minutes, or until the rice is tender and the chicken is cooked through (165°F / 74°C), and the liquid is mostly absorbed.
  • Remove from the oven and let it rest, still covered, for 5-10 minutes.

Serve

  • Garnish with fresh chopped parsley before serving, if desired.

Notes

For best results, do not stir the ingredients after pouring the liquid mixture over them; this allows the rice to cook properly. You can customize the vegetables by adding corn, bell peppers, or green beans. Ensure the chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
