  • 2 lbs Russet Potatoes (or Yukon Golds)
  • 2 large Yellow Onions
  • 1/4 cup Olive Oil (or vegetable oil)
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • Salt to taste
  • Freshly Ground Black Pepper to taste
  • 1/4 cup Water or Vegetable Broth

Optional Garnish

  • Fresh chopped parsley for garnish

Preparation

  • Wash, peel, and cut potatoes into uniform 1/2-inch cubes for even cooking.

Cooking

  • Heat oil in a large skillet over medium-high heat, then add cubed potatoes and cook for 8-10 minutes until browned.
  • Slice onions into thin half-moons and add them to the skillet with the potatoes, reducing heat to medium.
  • Sprinkle paprika, garlic powder, salt, and pepper over the mixture, stir well, then add water or broth.
  • Cover the skillet, reduce heat to medium-low, and simmer for 15-20 minutes until potatoes are tender and onions are soft.
  • Uncover and increase heat to medium-high; cook for another 5-7 minutes, stirring occasionally, until liquid evaporates and vegetables are golden.

Finishing and Serving

  • Taste and adjust seasoning as needed, then remove from heat.
  • Garnish with fresh parsley if desired, and serve hot.

Notes

For best results, ensure potatoes are cut uniformly. Adjust seasonings to your personal preference. A cast iron skillet helps achieve a nice crust on the potatoes.
