Ingredients
  

Spring Rolls

  • Fresh Fruit Assortment thinly sliced strawberries, kiwi, mango, blueberries, raspberries, melon, or grapes
  • Cream Cheese softened
  • 1-2 tablespoons Honey
  • 1/2 teaspoon Vanilla Extract
  • Lime zest and juice
  • Rice Paper Wrappers
  • Fresh Mint Leaves optional

Honey-Lime Dip

  • 2 tablespoons Honey
  • half a lime Lime juice
  • pinch Lime zest

Instructions
 

Preparation

  • Combine softened cream cheese, 1-2 tablespoons of honey, and 1/2 teaspoon of vanilla extract in a small bowl; mix until smooth.
  • Wash and thinly slice all chosen fruits so they are small enough to fit into the rolls without tearing the wrapper.
  • Prepare a shallow dish with warm water and arrange all ingredients (fruit, cream cheese, mint) within easy reach.

Assembly

  • Dip one rice paper wrapper in warm water for 15-20 seconds until pliable, then lay it flat on a clean, damp surface.
  • Spread a thin layer of cream cheese mixture across the bottom third of the wrapper.
  • Arrange a small selection of sliced fruits and a few mint leaves on top of the cream cheese, being careful not to overfill.
  • Fold the bottom edge over the filling, then fold in the sides, and tightly roll from the bottom upwards into a cylinder.
  • Repeat the assembly process with the remaining wrappers and fruit.

Dip

  • Whisk together 2 tablespoons of honey, the juice of half a lime, and a pinch of lime zest in a small bowl to create the dip.

Notes

For best results, consume spring rolls fresh. If making ahead, cover loosely with a damp paper towel and refrigerate for up to 1-2 hours to prevent drying. Feel free to experiment with different fruit combinations based on seasonal availability. You can also add a pinch of cinnamon or cardamom to the cream cheese mixture for a different flavor profile.
