Classic Garlic Parmesan Potatoes

  • 2 lbs small to medium potatoes Yukon Gold or red recommended
  • 4-6 garlic minced finely
  • 1/4 cup olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley or chives chopped, for garnish
  • 1 teaspoon dried oregano optional
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground is always best

Preparation

  • Preheat the oven to 400°F (200°C) and wash the potatoes. Cut larger potatoes into 1-inch pieces, ensuring they are roughly the same size for even cooking.

Cooking

  • In a large bowl, combine the potatoes with minced garlic, olive oil, optional dried oregano, salt, and pepper, then toss to coat them evenly.
  • Spread the seasoned potatoes in a single layer on a baking sheet, using two sheets if necessary to prevent overcrowding.
  • Bake for 25-35 minutes, stirring halfway, until they are tender, golden brown, and crispy.
  • Remove the potatoes from the oven, sprinkle with Parmesan cheese, and return to the oven for 5-7 minutes until the cheese is melted and bubbling.

Serving

  • Transfer the roasted potatoes to a serving dish and garnish with fresh chopped parsley or chives before serving immediately.

Notes

For extra crispiness, you can soak the cut potatoes in cold water for 30 minutes before roasting, then pat them dry thoroughly. Be sure not to overcrowd the baking sheet to achieve the best texture. These potatoes are best served fresh, right out of the oven!
