  • 1 pound large or jumbo shrimp peeled and deveined, tails on or off
  • 2 tablespoons extra virgin olive oil
  • 3-4 cloves garlic minced
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped (for garnish, optional)
  • 1/2 whole lemon juiced (for finishing)
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes optional, for a little kick

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • Pat the shrimp dry with paper towels and place them in a large bowl. Add olive oil, minced garlic, Parmesan cheese, salt, pepper, and red pepper flakes (if using) to the shrimp.
  • Toss everything gently until the shrimp are evenly coated, then spread them in a single layer on the prepared baking sheet, ensuring not to overcrowd.

Cooking

  • Roast for 8-12 minutes, or until the shrimp are pink, opaque, and cooked through, avoiding overcooking.
  • Remove from the oven, squeeze fresh lemon juice over the hot shrimp, and sprinkle with fresh chopped parsley if desired. Serve immediately.

Notes

Overcooking shrimp can make them tough, so watch carefully and remove them from the oven as soon as they turn pink and opaque. The lemon juice at the end brightens the flavors considerably, so don't skip it!
