  • 2 fillets fresh salmon fillets (wild-caught preferred), about 6 oz each, skin on
  • 1 tablespoon extra virgin olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 lemon
  • 1 tablespoon fresh dill (for garnish)

Instructions
 

Preparation

  • Pat salmon fillets dry, then brush with olive oil and season with salt and pepper.
  • Preheat grill or grill pan to medium-high heat (400-450°F / 200-230°C) and lightly oil the grates.
  • Place salmon skin-side down on the grill and cook for 4-6 minutes until skin is crispy.
  • Flip the salmon and grill for another 3-5 minutes, until it reaches an internal temperature of 145°F (63°C).
  • Remove salmon, let it rest, then squeeze lemon juice over it and garnish with fresh dill.

Notes

For best results, use wild-caught salmon. Adjust grilling time based on the thickness of your salmon fillets to ensure it's cooked through but still moist.
