  • 1.5 lbs 80/20 lean ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and diced into ½-inch cubes
  • ½ cup beef broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Fresh parsley or cilantro for garnish (optional)

Cooking Steps

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add ground beef and cook, breaking it up, until fully browned. Drain excess grease and set aside.
  • Add the remaining 1 tablespoon of olive oil to the skillet, then cook the chopped onion until softened (5-7 minutes).
  • Stir in minced garlic and cook for one minute until fragrant.
  • Return the browned ground beef to the skillet.
  • Stir in diced sweet potatoes, beef broth, salt, pepper, paprika, and cumin.
  • Bring to a simmer, then cover and cook on medium-low for 15-20 minutes until sweet potatoes are tender, stirring occasionally.
  • Remove the lid, increase heat to evaporate remaining liquid if desired, then taste and adjust seasonings.
  • Serve hot, garnished with fresh parsley or cilantro if using.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the spices. If you prefer a richer sauce, stir in 1-2 tablespoons of tomato paste when adding the beef broth. This dish reheats well and can be a great option for meal prepping throughout the week.
