  • 1 lb lean ground beef
  • 3 cups cooked white rice, chilled (day-old is best)
  • 1 tbsp vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed frozen vegetables (peas, carrots, corn)
  • 2 large eggs, lightly beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Green onions, chopped

Cooking Steps

  • Heat a large skillet or wok over medium-high heat. Cook ground beef until browned, then drain excess fat and set aside.
  • Add vegetable oil to the skillet, then sauté diced onion for 2-3 minutes. Stir in minced garlic for 30 seconds, then add mixed frozen vegetables and cook for 3-5 minutes until tender-crisp.
  • Push vegetables to one side, pour beaten eggs into the empty space, and scramble until cooked through. Break eggs into smaller pieces and mix with vegetables.
  • Return cooked ground beef to the skillet and add chilled cooked rice, breaking up any clumps.
  • Whisk together soy sauce, oyster sauce (if using), and sesame oil in a small bowl, then pour evenly over the rice and beef.
  • Increase heat to high and stir-fry for 3-5 minutes until ingredients are combined, rice is heated, slightly crispy, and coated in sauce.
  • Remove from heat, stir in most of the chopped green onions, and serve immediately garnished with remaining green onions.

Notes

Day-old rice works best for fried rice as it is drier and prevents the dish from becoming mushy. Adjust soy sauce to taste based on your preference for saltiness.
