  • 1 lb ground beef 80/20 lean
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
  • 2 cups mixed vegetables frozen peas, carrots, corn, green beans, or fresh bell peppers, zucchini, mushrooms
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup beef broth or water
  • 2 tablespoons tomato paste optional
  • 1 tablespoon Worcestershire sauce
  • salt to taste
  • black pepper to taste
  • paprika to taste
  • dried oregano to taste
  • 1 tablespoon olive oil

  • Heat olive oil in a large skillet, brown the ground beef, crumbling it, then drain any excess grease.
  • Reduce heat to medium, sauté chopped onion until soft, then stir in minced garlic and optional tomato paste until fragrant.
  • Stir in the mixed vegetables, undrained diced tomatoes, beef broth, and Worcestershire sauce.
  • Season with salt, black pepper, paprika, and dried oregano, then stir everything together.
  • Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes until vegetables are tender and sauce thickens.
  • Taste and adjust seasonings as needed; if the sauce is too thin, simmer uncovered for a few extra minutes to reduce.
  • Ladle into bowls and, if desired, top with shredded cheese and fresh herbs.
