  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, chopped
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup chicken or vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 1 cup fresh spinach roughly chopped

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up, and cook until browned, about 5-7 minutes. Drain any excess fat.
  • Add chopped onion and bell pepper to the skillet; sauté for 5-7 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  • Stir in diced tomatoes, broth, oregano, and chili powder. Season with salt and pepper, then bring to a simmer.
  • Reduce heat to medium-low, cover, and simmer for 10-15 minutes to meld the flavors.
  • Stir in fresh spinach and cook until wilted, about 2-3 minutes.
  • Serve hot, optionally garnished with shredded cheddar cheese and fresh chopped parsley.

Notes

For a spicier kick, add a pinch of red pepper flakes with the chili powder. This dish can also be served over rice or pasta for a more complete meal. Leftovers store well in the refrigerator for up to 3 days.
