  • 1 lb Lean Ground Turkey 93% or 95% lean
  • 1 tbsp Olive Oil
  • Medium Onion finely chopped
  • 2-3 Garlic minced
  • 2 cups Mixed Vegetables chopped (carrots, celery, bell peppers, zucchini, or frozen mixed veggies)
  • 1 (14.5 oz) Can Diced Tomatoes undrained
  • 1 cup Chicken or Vegetable Broth low sodium
  • 1 tsp Dried Italian Seasoning
  • 1/2 tsp Smoked Paprika
  • Salt and Black Pepper to taste

Preparation

  • Chop the onion, mince the garlic, and dice any fresh vegetables you are using to prepare for cooking.

Cooking

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Sauté chopped onion for 5-7 minutes until softened and translucent, then stir in minced garlic and cook for 1 minute until fragrant.
  • Add ground turkey to the skillet, break it up, and cook until browned and no longer pink; drain excess fat if needed.
  • Stir in the chopped mixed vegetables, Italian seasoning, and smoked paprika, cooking for 5-7 minutes until vegetables soften and absorb flavors.
  • Pour in undrained diced tomatoes and low-sodium broth, stir, and bring to a gentle simmer. Reduce heat to low, cover, and cook for 15-20 minutes to meld flavors and tenderize vegetables.
  • Taste and adjust seasoning with salt and black pepper as needed before serving hot with your preferred accompaniments.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. This dish also works well with other ground meats like chicken or lean beef. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and reheated gently on the stovetop or in the microwave.
