Ingredients
  

Chicken

  • 1.5 - 2 lbs boneless, skinless chicken breasts or thighs cut into 1-inch pieces

Hearty Vegetables

  • 2 cups baby potatoes halved or quartered
  • 2 cups carrots peeled and chopped into 1-inch pieces
  • 1 large onion chopped
  • 2 cups broccoli florets

Aromatic Vegetables

  • 1 red bell pepper chopped
  • 1 cup sliced mushrooms

Broth

  • 1.5 cups low-sodium chicken broth

Seasoning

  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper
  • salt to taste

Optional Flavor Boost

  • 1 tbsp olive oil
  • fresh parsley for garnish

Instructions
 

Prep

  • Cut chicken breasts or thighs into 1-inch, bite-sized pieces, trimming any excess fat if necessary.

Combine and Season

  • Place chicken, potatoes, carrots, onion, red bell pepper, and mushrooms into the slow cooker.
  • Sprinkle oregano, thyme, garlic powder, salt, and pepper over the ingredients and toss to coat.
  • Pour chicken broth over the mixture.

Cook

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked and vegetables are tender.
  • Stir in broccoli florets during the last 30-45 minutes of cooking to ensure they are tender-crisp.

Serve

  • Taste and adjust seasoning with salt and pepper as needed.
  • Ladle into bowls and garnish with fresh parsley if desired.

Notes

For best results, do not overcook the broccoli. Adding it towards the end keeps it from becoming mushy. This dish is great for meal prepping and freezes well. Feel free to substitute other hearty vegetables like sweet potatoes or parsnips.
