  • Colander
  • Clean Kitchen Towel or Paper Towels
  • Medium Bowl
  • Large Skillet
  • Spatula

Ingredients

Main Ingredients

  • 2-3 medium-sized fresh zucchini
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon salt (for salting zucchini)
  • 1/4 teaspoon salt (for batter)
  • 1/8 teaspoon black pepper
  • 1-2 tablespoons olive oil (for frying)
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley or dill

Instructions

Preparation

  • Grate the zucchini using a box grater or food processor.
  • Place grated zucchini in a colander, sprinkle with 1/2 teaspoon salt, and let it sit for 10-15 minutes to draw out water. Afterwards, squeeze the zucchini in a clean kitchen towel to remove all liquid.

Cooking

  • In a medium bowl, combine the squeezed zucchini, 1 egg, 1/4 cup all-purpose flour, 1/4 teaspoon salt, 1/8 teaspoon black pepper, 1 minced clove of garlic, and 2 tablespoons of chopped fresh parsley or dill. Mix until just combined.
  • Heat 1-2 tablespoons of olive oil in a large skillet over medium heat.
  • Drop spoonfuls of the zucchini mixture into the hot oil, flattening them into discs. Cook for 3-4 minutes per side, or until golden brown.

Serving

  • Transfer cooked fritters to a plate lined with paper towels to drain excess oil.

Notes

For extra crispiness, ensure to really squeeze out as much moisture as possible from the zucchini. These fritters are delicious served with a dollop of Greek yogurt or a lemon-garlic aioli.
