  • 1-1.5 lbs Ground Meat (ground beef)
  • 4-5 Potatoes medium-sized, peeled and sliced or cubed
  • 1 Onion medium, chopped
  • 2 cups Mixed Vegetables (frozen mixed veggies, corn, and green beans)
  • 1 Cream of Mushroom Soup (10.5 oz) can
  • 1/2 cup Milk
  • 1 cup Cheese shredded cheddar

Seasonings & Optional

  • Salt to taste
  • Pepper to taste
  • Garlic Powder to taste
  • Onion Powder to taste
  • 1 tbsp Olive Oil (for browning meat)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) to get it ready for baking.
  • In a large skillet, brown your ground meat over medium heat, draining any excess fat. Stir in the chopped onion and cook until softened, then season with salt, pepper, garlic powder, and onion powder.
  • Peel and slice or cube the potatoes. For quicker cooking, you can boil them for 5-7 minutes until slightly tender, or slice them very thinly.

Assembly & Baking

  • Spread the cooked meat and onion mixture evenly in a 9x13 inch baking dish, then arrange the potatoes over the meat. Top with the mixed vegetables.
  • Whisk together the cream of mushroom soup and milk in a medium bowl until smooth, then pour this sauce evenly over the vegetables and potatoes.
  • Cover the baking dish tightly with aluminum foil and bake for 45 minutes to 1 hour, or until the potatoes are tender when pierced.
  • Remove the foil, sprinkle with shredded cheese, and return to the oven, uncovered, for another 10-15 minutes until the cheese is melted and bubbly.
  • Let the casserole rest for 5-10 minutes before serving to allow the flavors to set.

Notes

For a richer flavor, you can add a dash of Worcestershire sauce to the meat mixture. Feel free to customize the vegetables based on what you have on hand or prefer. If you want a crispy top, you can broil the casserole for a few minutes after the cheese melts, but watch it carefully to prevent burning.
