  • 2 lbs large shrimp peeled and deveined, tails on or off
  • 3 cloves garlic minced
  • ¼ cup honey
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger grated
  • 1 tsp sesame oil
  • ½ tsp red pepper flakes optional, for a kick
  • 1 tbsp olive oil or avocado oil

For the Rice Bowls:

  • 2 cups cooked white rice Jasmine or Basmati recommended
  • 1 cup steamed broccoli florets
  • 1 cup shredded carrots
  • ½ red bell pepper thinly sliced
  • ¼ cup chopped green onions for garnish
  • Sesame seeds for garnish

  • Whisk together garlic, honey, soy sauce, rice vinegar, ginger, sesame oil, and red pepper flakes in a bowl to make the sauce.
  • Heat olive oil in a skillet or wok over medium-high heat, then cook shrimp for 1-2 minutes per side until pink. Cook in batches if needed to avoid overcrowding.
  • Pour the honey garlic sauce over the cooked shrimp and simmer for 1-2 minutes until the sauce slightly thickens and coats the shrimp. Remove from heat immediately.
  • Divide the cooked rice evenly among four serving bowls.
  • Arrange steamed broccoli, shredded carrots, and sliced red bell pepper next to the rice in each bowl.
  • Spoon a generous serving of the honey garlic shrimp over the rice and vegetables.
  • Garnish with chopped green onions and sesame seeds, then serve immediately.

Notes

Don't overcook the shrimp; they cook quickly. Feel free to adjust the amount of red pepper flakes to your spice preference. Serve with a squeeze of fresh lime for extra brightness.
