  • 2 medium-sized Acorn Squash (about 1.5-2 lbs each), firm and unblemished
  • 1/4 cup Honey a good quality honey will make a difference
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Dried thyme

Preparation

  • Preheat oven to 400°F (200°C). Carefully cut each acorn squash in half lengthwise and scoop out the seeds and stringy bits.
  • Place squash halves cut-side up on a baking sheet lined with parchment paper.

Glazing and Roasting

  • In a small bowl, whisk together honey, olive oil, salt, black pepper, garlic powder, and dried thyme to create the glaze.
  • Brush half of the glaze generously over the cut surfaces of the squash. Flip the squash cut-side down onto the baking sheet.
  • Roast for 20-25 minutes, until the squash softens and edges are lightly browned.
  • Flip the squash cut-side up and brush with the remaining glaze.
  • Continue roasting for another 15-20 minutes until very tender and the glaze is bubbly and caramelized.

Serving

  • Remove from the oven and let cool slightly before serving.

Notes

Cooking time may vary based on squash size; monitor closely for desired tenderness and caramelization. You can add a pinch of cayenne for a subtle kick to the glaze.
