Ingredients
  

Sopaipillas

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 2 tablespoons shortening (or unsalted butter), cold and cubed
  • 3/4 cup warm water (or milk)
  • Vegetable oil for frying

For Serving

  • 1/2 cup warm honey for serving (optional: a pinch of cinnamon added to the honey)
  • 1/4 cup powdered sugar for dusting, optional

Instructions
 

Preparation

  • In a large bowl, combine flour, baking powder, salt, and granulated sugar.
  • Cut in the cold shortening or butter until coarse crumbs form, then gradually add warm water or milk to form a soft dough.
  • Lightly knead the dough for 1-2 minutes until smooth, then cover and let it rest for 15-30 minutes.
  • While the dough rests, heat 2-3 inches of vegetable oil in a heavy-bottomed pot to 350-375°F (175-190°C).

Frying and Serving

  • On a floured surface, roll out the dough to about 1/8 to 1/4 inch thickness and cut into 2-3 inch squares or triangles.
  • Carefully fry a few dough pieces in the hot oil for 30-60 seconds per side until golden brown and puffed.
  • Remove the fried sopaipillas and drain excess oil on paper towels.
  • Drizzle immediately with warm honey (with optional cinnamon) and, if desired, dust with powdered sugar; serve hot.

Notes

For best results, maintain consistent oil temperature during frying. These are best enjoyed warm and fresh. You can also experiment with other toppings like chocolate sauce or fruit preserves.
