  • 1 tbsp cooking oil avocado or canola recommended
  • 1 lb lean ground beef 90% lean or higher
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1/2 yellow onion finely chopped (optional, or use 2 green onions, chopped)
  • Large lettuce leaves Butter, Iceberg, or Romaine hearts

Sauce Ingredients

  • 1/4 cup soy sauce or Tamari/Coconut Aminos
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey or brown sugar/maple syrup

Optional Garnishes

  • Fresh cilantro chopped
  • green onions chopped
  • sesame seeds
  • chopped peanuts
  • Sriracha
  • chili garlic sauce for serving

Instructions
 

Preparation

  • Separate, wash, and thoroughly dry the lettuce leaves, then arrange them on a platter.

Cooking

  • Heat a large skillet or wok over medium-high heat with cooking oil, then add ground beef and cook until browned, breaking it up with a spoon.
  • Drain any excess fat from the skillet after the beef is browned.
  • Add minced garlic, grated ginger, and chopped onion to the beef mixture and sauté for 2-3 minutes until fragrant.
  • Whisk together soy sauce, rice vinegar, sesame oil, and honey, then pour over the beef and aromatics, stirring to coat.
  • Simmer the mixture for 2-3 minutes to meld flavors and slightly thicken the sauce.
  • Taste the beef mixture and adjust seasonings as needed for flavor balance.

Serving

  • Spoon the hot beef mixture into the prepared lettuce cups and garnish with your favorite fresh toppings; serve immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes with the aromatics. This recipe is also great for meal prep; simply store the beef mixture and lettuce separately, assembling just before serving.
