  • 2 salmon fillets (about 6 oz each), fresh or thawed frozen
  • 1 tablespoon olive oil
  • 1 lemon half thinly sliced, half for juice
  • 1 teaspoon dried dill (or 1 tablespoon fresh, chopped)
  • ½ teaspoon dried parsley (or 1 tablespoon fresh, chopped)
  • ½ teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 1 bunch asparagus woody ends trimmed

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pat the salmon fillets dry with a paper towel.
  • Whisk together olive oil, lemon juice, dill, parsley, garlic powder, salt, and pepper in a small bowl.
  • Place salmon on the baking sheet and coat evenly with the seasoning mixture.
  • Arrange trimmed asparagus around the salmon, drizzle with olive oil, salt, and pepper.
  • Place lemon slices on top of the salmon fillets.
  • Bake for 12-18 minutes, until salmon flakes easily and asparagus is tender-crisp.
  • Remove from oven and let rest for a few minutes before serving.

Notes

Cooking time may vary based on salmon thickness. For best results, use fresh salmon and fresh herbs if available.
