  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Preparation

  • Chop the onion, dice the bell pepper, and mince the garlic to prepare your vegetables for cooking.

Cooking

  • Heat olive oil in a large skillet or Dutch oven over medium-high heat, then brown the ground turkey, breaking it up until no longer pink, and drain excess fat.
  • Add chopped onion and bell pepper to the skillet with the turkey and sauté them for 5-7 minutes until soft, then stir in minced garlic and cook for one minute until fragrant.
  • Pour diced tomatoes and broth into the skillet, stir in oregano and basil, and season with salt and pepper.
  • Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, stirring occasionally, to meld flavors and thicken the sauce.
  • Taste the mixture and adjust seasonings as needed, adding a pinch of sugar if necessary to balance acidity.

Serving

  • Ladle the ground turkey dinner into bowls and garnish with fresh parsley or cilantro if desired.

Notes

This recipe is easily adaptable; feel free to add other vegetables like zucchini or spinach for extra nutrition. Serve with rice, pasta, or a side salad for a complete meal.
