  • 4 large Russet potatoes
  • 1 tablespoon olive oil (for potatoes)
  • Salt and black pepper
  • 1 lb sirloin steak or tenderloin
  • 1 tablespoon olive oil (for steak)
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup fresh chives or green onions

Preparation

  • Preheat your oven to 400°F (200°C). Scrub and pierce the potatoes, then rub them with olive oil, salt, and pepper.
  • Bake potatoes on the oven rack for 50-60 minutes until crisp and easily pierced.
  • While potatoes bake, pat the steak cubes dry and toss with olive oil, garlic powder, smoked paprika, salt, and pepper.

Cooking and Assembly

  • Heat a cast-iron skillet over medium-high heat and sear steak bites for 2-3 minutes per side until desired doneness, cooking in batches if necessary.
  • Remove baked potatoes from the oven and slice each lengthwise without cutting all the way through; gently squeeze to open.
  • Fluff the potato flesh with a fork, then add sour cream, shredded cheddar cheese, and steak bites.
  • Garnish with fresh chives or green onions and any other desired toppings, then serve immediately and enjoy.

Notes

For extra flavor, consider marinating the steak for at least 30 minutes before cooking. Adjust the amount of salt and pepper to your preference. If you prefer a softer potato skin, you can wrap the potatoes in foil before baking. Be careful not to overcook the steak bites to keep them tender and juicy. The optional toppings can significantly customize the dish to your liking.
