  • 1 lb lean ground beef (80/20 or 90/10)
  • 1 small head green cabbage (about 2 lbs), shredded or thinly sliced
  • 1 tablespoon olive oil or avocado oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated

Stir-Fry Sauce

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon erythritol or preferred low-carb sweetener (optional)
  • 0.5 teaspoon red pepper flakes (optional)

Garnish

  • Green onions sliced, for garnish

Instructions
 

Preparation

  • Shred the cabbage, mince the garlic, and grate the ginger.
  • Combine soy sauce, rice vinegar, sesame oil, and optional erythritol and red pepper flakes in a small bowl to make the stir-fry sauce.

Cooking

  • Heat oil in a large skillet or wok over medium-high heat and brown the ground beef, breaking it apart as it cooks.
  • Drain any excess fat from the cooked beef.
  • Reduce heat to medium, then add minced garlic and grated ginger to the beef; sauté for about 1 minute until fragrant.
  • Add the shredded cabbage to the skillet and toss everything together, cooking for 5-7 minutes until the cabbage is tender-crisp.
  • Pour the prepared stir-fry sauce over the beef and cabbage, tossing constantly for 1-2 minutes to allow the sauce to thicken and coat.

Serving

  • Remove from heat, garnish with sliced green onions, and serve immediately.

Notes

For a spicier kick, increase the amount of red pepper flakes. You can also add other low-carb vegetables like bell peppers or mushrooms for more variety.
