  • 1 lb Assorted Cheeses e.g., Sharp Cheddar, Mozzarella, Provolone, Colby Jack, or Fresh Mozzarella pearls
  • 1/2 cup Good Quality Olive Oil Extra virgin recommended
  • 2 tablespoons Red Wine Vinegar
  • 1 tablespoon Fresh Rosemary finely chopped
  • 1 tablespoon Fresh Thyme finely chopped
  • 1 tablespoon Fresh Parsley finely chopped
  • 2 cloves Garlic minced
  • 1/2 teaspoon Red Pepper Flakes optional, for a hint of warmth
  • 1/2 teaspoon Black Pepper freshly ground
  • 1/4 teaspoon Salt or to taste

Instructions
 

Preparation

  • Cut cheese blocks into ½ to ¾ inch cubes or drain mozzarella pearls, then place all cheese in a large, non-reactive bowl or container.

Marinade

  • Whisk together olive oil, red wine vinegar, minced garlic, chopped rosemary, thyme, parsley, red pepper flakes (if using), black pepper, and salt in a separate medium bowl until well combined.

Combine & Marinate

  • Pour the marinade over the cubed cheese, ensuring all pieces are coated, and gently toss with a spoon or spatula.

Chill & Infuse

  • Cover the bowl tightly with plastic wrap or transfer to an airtight container and refrigerate for at least 4 hours, or ideally 12-24 hours, stirring occasionally for best flavor infusion.

Serve

  • Before serving, allow the marinated cheese to sit at room temperature for 20-30 minutes to soften the olive oil and enhance the flavors.

Notes

For best results, marinate the cheese overnight to allow the flavors to fully develop. Serve with crackers, crusty bread, or as part of a charcuterie board.
