  • 1 ½ cups cooked green beans fresh blanched, frozen thawed and well-drained, or canned well-drained
  • 1 can regular or low-sodium cream of mushroom soup 10.5 ounce
  • ¼ cup milk dairy or non-dairy
  • 1 teaspoon soy sauce
  • ¼ teaspoon black pepper
  • 1 cup crispy fried onions divided
  • 1 sheet puff pastry or crescent roll dough from an 8-ounce can

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 24-cup mini muffin tin.
  • If using puff pastry or crescent roll dough, unroll it onto a lightly floured surface, then cut into 24 squares or circles and press into the muffin tin cups.
  • In a large bowl, whisk together the cream of mushroom soup, milk, soy sauce, and black pepper until smooth.
  • Stir in the drained green beans until fully coated in the creamy mixture.
  • Spoon the green bean mixture evenly into the prepared muffin tin cups, filling them almost to the top.
  • Sprinkle ½ cup of the crispy fried onions over each mini casserole bite and gently press them down.
  • Bake for 15-20 minutes, or until the filling is bubbly, the dough is golden brown, and the onions are golden.
  • Let the bites cool in the muffin tin for a few minutes before carefully removing them.
  • Serve warm, optionally topped with the remaining ½ cup crispy fried onions just before serving for extra crunch.

Notes

For extra flavor, you can sauté a small amount of diced onion or garlic and add it to the green bean mixture. Be sure the green beans are very well drained to prevent a watery filling. These bites can be prepared ahead of time and reheated in the oven or air fryer for a quick snack or party appetizer.
