  • 1 cup Cheddar cheese shredded (sharp cheddar adds a nice bite)
  • 2-3 medium Jalapeños finely diced (remove seeds for less heat, leave some in for more kick)
  • 2 tablespoons Green onions thinly sliced (adds a mild onion flavor)
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Salt or to taste
  • 1/8 teaspoon Black pepper or to taste

Other

  • 20-25 count Mini egg roll wrappers (check the refrigerated section of your grocery store)
  • 2-3 cups Vegetable oil For frying (depending on your pan)
  • Water For sealing wrappers

Instructions
 

Preparation

  • In a medium mixing bowl, combine cream cheese, cheddar cheese, diced jalapeños, green onions, garlic powder, salt, and black pepper. Mix thoroughly until smooth and well incorporated.
  • Lay an egg roll wrapper like a diamond, place a tablespoon of filling just below the center, then fold the bottom corner over the filling. Fold in the left and right corners, then roll tightly upwards, sealing the top corner with water. Repeat for remaining wrappers.

Cooking

  • Heat 1-2 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C) over medium-high heat.
  • Carefully place 4-5 egg rolls into the hot oil, ensuring not to overcrowd, and fry for 2-3 minutes per side until golden brown and crispy.
  • Remove fried egg rolls with tongs and place on a paper towel-lined plate to drain excess oil.

Serving

  • Let the egg rolls cool slightly before serving; they are best enjoyed warm.

Notes

For extra crispiness, ensure the oil is at the correct temperature before frying. These egg rolls can also be baked at 375°F (190°C) for 15-20 minutes, or until golden brown, for a healthier option. Serve with your favorite dipping sauce, such as ranch or sweet chili sauce.
