  • 2 lbs Boneless, skinless chicken thighs or breasts
  • 1 packet (1 oz) Ranch seasoning mix
  • 1 packet (1 oz) Au jus gravy mix
  • 1 stick (1/2 cup), unsalted or salted Butter
  • 1/2 cup Pepperoncini peppers plus 1/4 to 1/2 cup of their juice
  • 1 tablespoon Vegetable oil for searing, optional

  • Pat the chicken dry with paper towels; if using breasts, trim excess fat.
  • Optionally, sear the chicken in a large skillet over medium-high heat for 2-3 minutes per side until lightly golden.
  • Place the chicken into the bottom of your slow cooker.
  • Evenly sprinkle the entire packet of Ranch seasoning mix and au jus gravy mix over the chicken.
  • Place the stick of butter on top of the chicken.
  • Scatter the pepperoncini peppers around and on top of the chicken, then pour in 1/4 to 1/2 cup of their juice.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fork-tender.
  • Remove the chicken, shred it with two forks, and return it to the slow cooker to stir into the gravy. Serve warm.

Notes

For an extra kick, add a pinch of red pepper flakes with the seasonings. This recipe is also great with pork roast instead of chicken.
