Classic Mississippi Mud Pie

Ingredients
  

For the Crust:

  • 24 Oreo cookies (or similar chocolate sandwich cookies), crushed
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or chopped chocolate (dark or semi-sweet)

For the Topping:

  • 1 1/2 cups heavy cream, very cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Prepare the Crust

  • Combine crushed Oreos and melted butter, then press into a 9-inch pie plate.
  • Bake the crust at 350°F (175°C) for 8-10 minutes, then cool completely.

Make the Chocolate Filling

  • Whisk together sugar, cocoa powder, cornstarch, and salt in a saucepan.
  • Gradually whisk in whole milk until smooth.

Cook the Custard

  • Cook the mixture over medium heat, stirring constantly, until it thickens and bubbles for 1 minute.
  • Remove from heat.

Temper the Egg Yolks

  • Lightly whisk egg yolks in a separate bowl.
  • Gradually whisk 1/2 cup of hot chocolate mixture into the egg yolks.

Combine and Finish Filling

  • Pour tempered egg yolks back into the saucepan with the remaining chocolate mixture.
  • Cook over medium-low heat for 1-2 minutes, stirring constantly, until the filling is very thick and glossy.

Add Finishing Touches to Filling

  • Remove from heat and stir in butter, vanilla extract, and chocolate chips until melted and smooth.

Assemble the Pie

  • Pour the warm chocolate filling evenly into the cooled pie crust.

Chill

  • Cover and refrigerate for 4-6 hours or overnight until completely set and chilled.

Prepare the Topping

  • Before serving, whip cold heavy cream, powdered sugar, and vanilla extract in a chilled bowl until stiff peaks form.

Decorate and Serve

  • Spread or pipe whipped cream over the chilled pie.
  • Garnish and serve immediately.

Notes

For best results, make sure your heavy cream is very cold before whipping. You can chill your mixing bowl and whisk in the freezer for 10-15 minutes to help achieve stiff peaks. To prevent a skin from forming on your chocolate filling while chilling, you can place plastic wrap directly on the surface of the warm filling before refrigerating.
