Ingredients
  

For the Cake

  • 2 ½ cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • ½ tsp Salt
  • ½ cup Unsalted butter room temperature
  • 2 Large eggs
  • 1 ½ tsp Vanilla extract
  • 1 cup Sour cream or plain full-fat yogurt

For the Crumb Topping

  • 1 ½ cups All-purpose flour
  • ¾ cup Granulated sugar
  • ½ cup Light brown sugar packed
  • 2 tsp Ground cinnamon
  • ½ cup Unsalted butter melted

Preparation

  • Grease and flour a 9x13 inch baking pan or line with parchment paper. Preheat oven to 350°F (175°C).

Crumb Topping

  • In a medium bowl, whisk together the flour, granulated sugar, brown sugar, and cinnamon. Add melted butter and mix until large, moist crumbs form.

Cake Batter

  • In a large bowl, whisk together the dry cake ingredients: flour, granulated sugar, baking powder, baking soda, and salt.
  • In a separate medium bowl, cream softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with sour cream/yogurt, beginning and ending with dry ingredients; mix until just combined.

Bake

  • Pour cake batter into the prepared pan, then sprinkle the crumb topping evenly over the surface, gently pressing some crumbs into the batter.
  • Bake for 35-45 minutes until a wooden skewer inserted into the center comes out with moist crumbs.

Cool

  • Let the cake cool completely in the pan on a wire rack before slicing and serving. This ensures it sets properly.

Notes

For best results, ensure butter and eggs are at room temperature for the cake batter. Do not overmix the cake batter, as this can lead to a dry cake. The cooling step is crucial for the cake to set properly and prevent crumbling, so resist the urge to slice too early.
