Peanut Butter Cheesecake Base

  • 8 oz Cream cheese full-fat, softened
  • 1 cup Creamy peanut butter well-stirred
  • 1.5 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Graham cracker crumbs

Chocolate Coating & Toppings

  • 12 oz Chocolate chips or melting wafers
  • Optional toppings chopped nuts, sprinkles, extra peanut butter drizzle

Preparation

  • In a large bowl, beat softened cream cheese and creamy peanut butter until smooth, ensuring no lumps.
  • Gradually add powdered sugar and vanilla extract, mixing until the mixture is light and fluffy.
  • Gently fold in graham cracker crumbs for added texture.
  • Cover the bowl and refrigerate for 1-2 hours until the mixture is firm enough to roll.
  • Once chilled, scoop out 1 tablespoon portions and roll them into compact balls, placing them on a parchment-lined baking sheet.
  • Melt chocolate chips or melting wafers in a microwave-safe bowl, stirring every 30 seconds until smooth.
  • Dip each ball into the melted chocolate, coating completely, then lift with a fork to remove excess.
  • Place coated balls back on the baking sheet, add optional toppings immediately, and refrigerate for another 20-30 minutes until the chocolate is fully set.

Notes

For best results, ensure your cream cheese is very soft before mixing. Adjust sweetness to your preference by adding more or less powdered sugar. If the chocolate becomes too thick while dipping, reheat it briefly in the microwave. Enjoy these delightful treats chilled!
