  • 1 pound large shrimp peeled and deveined (fresh or frozen, thawed)
  • 4-6 garlic minced
  • 2 tablespoons olive oil
  • 4 cups mixed quick-cooking vegetables e.g., broccoli florets, sliced bell peppers, asparagus spears, cherry tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes optional
  • Salt and freshly ground black pepper to taste
  • 1/2 lemon for squeezing
  • 2 tablespoons fresh parsley chopped (optional, for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a large rimmed baking sheet, toss your chosen vegetables with 1 tablespoon of olive oil, salt, and pepper, then spread them in a single layer.
  • Roast the vegetables in the preheated oven for 8-10 minutes until they are slightly tender-crisp.

Cooking the Shrimp

  • While the vegetables roast, combine the peeled shrimp with the remaining 1 tablespoon of olive oil, minced garlic, smoked paprika, onion powder, and red pepper flakes (if using) in a medium bowl, seasoning with salt and pepper until evenly coated.
  • Remove the baking sheet from the oven, push the partially cooked vegetables to one side, and spread the seasoned shrimp in a single layer on the other side of the pan.
  • Return the baking sheet to the oven and roast for 6-8 minutes until the shrimp are pink, opaque, and cooked through, being careful not to overcook.

Finishing Touches

  • Remove from the oven, squeeze fresh lemon juice over the entire dish, and sprinkle with fresh parsley if desired.
  • Serve immediately and enjoy!

Notes

For extra flavor, marinate the shrimp for 15-20 minutes before cooking. Adjust red pepper flakes to your spice preference.
