  • 1.5 lbs large shrimp raw, peeled, and deveined (tail-on or off)
  • 3 tbsp olive oil
  • 4 garlic minced
  • lemon zest of 1 large lemon
  • lemon juice of 1 large lemon
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 2 cups broccoli florets
  • 1 bell pepper any color, chopped into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1/2 red onion cut into wedges
  • 2 tbsp fresh parsley chopped (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, dried oregano, salt, and black pepper.
  • Add shrimp, broccoli florets, chopped bell pepper, cherry tomatoes, and red onion wedges to the bowl, then toss gently to coat evenly.
  • Spread the marinated shrimp and vegetables in a single layer on the prepared baking sheet, ensuring not to overcrowd.
  • Bake for 12-15 minutes, or until shrimp are pink and opaque and vegetables are tender-crisp; stir halfway through.
  • Remove from the oven, sprinkle with fresh chopped parsley, and serve immediately.

Notes

For extra flavor, marinate the shrimp and vegetables for 15-30 minutes before baking. You can also customize the vegetables based on what you have on hand, such as asparagus or zucchini.
