  • 2 lbs beef stew meat or sirloin tips cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 large onion
  • 4 cups beef broth low sodium
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste

For the Gravy

  • 1/4 cup all-purpose flour or cornstarch for gluten-free
  • 1/4 cup cold water if using flour to make a slurry before adding

Optional Additions

  • 1 tbsp tomato paste
  • 1/2 cup sliced mushrooms
  • 1 tbsp cornstarch

Cooking Steps

  • Heat olive oil in a Dutch oven over medium-high heat, then season and sear beef in batches until browned. Remove beef and set aside.
  • Add onion to the pot and cook until softened; if using, add mushrooms and cook until browned.
  • Stir in tomato paste if using, then sprinkle flour over onions and cook for 1-2 minutes to form a paste.
  • Gradually whisk in beef broth, scraping up browned bits, then stir in Worcestershire sauce, thyme, and garlic powder.
  • Return seared beef to the pot and bring the mixture to a gentle simmer.
  • Reduce heat to low, cover, and simmer for 1.5 to 2 hours until beef is tender; adjust gravy thickness as needed.
  • Taste and adjust seasonings, then serve hot.

Notes

For extra flavor, consider adding a bay leaf during the slow cooking process and removing it before serving. Serve over mashed potatoes, egg noodles, or rice for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and reheat well.
