  • 1.5 lbs Italian Sausage (mild or hot) cut into 1-inch pieces
  • 2 lbs Yukon Gold Potatoes scrubbed and cut into 1-inch cubes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 0.5 teaspoon Onion Powder
  • 0.5 teaspoon Smoked Paprika
  • 0.25 teaspoon Dried Rosemary crushed
  • Salt to taste
  • Black Pepper to taste
  • Fresh parsley optional, for garnish, chopped

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the cubed potatoes with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, rosemary, salt, and pepper; toss to coat evenly.
  • Add the cut sausage pieces to the same bowl, drizzle with the remaining 1 tablespoon of olive oil, and toss gently to coat.
  • Spread the seasoned potatoes and sausage in a single layer on the prepared baking sheet, ensuring not to overcrowd the pan.

Cooking

  • Bake for 25-30 minutes, flipping halfway through, until the potatoes are tender and golden brown, and the sausage is cooked through and nicely browned.

Serving

  • Remove from the oven, adjust seasoning as needed, garnish with fresh parsley if desired, and serve hot.

Notes

For extra crispiness, ensure the potatoes and sausage are spread in a single layer without overcrowding the baking sheet. If you prefer a spicier dish, use hot Italian sausage and add a pinch of red pepper flakes with the other seasonings.
