  • 2 per serving large eggs
  • 1 tablespoon milk or cream
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil or butter
  • 1/4 cup chopped pepperoni (or cooked sausage, or diced ham)
  • 2 tablespoons chopped bell peppers (or onions, or mushrooms)
  • 2 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella cheese
  • dried oregano or Italian seasoning optional
  • Fresh basil or parsley for garnish (optional)

Instructions
 

Preparation

  • In a small bowl, whisk together the eggs, milk (if using), salt, and pepper until they are light and foamy; avoid overmixing and just combine the yolks and whites.
  • Heat the olive oil or butter in a non-stick skillet over medium heat, then add your chosen protein and vegetables and cook for 2-3 minutes until crispy and tender-crisp.
  • Pour the whisked egg mixture over the cooked toppings in the skillet and let it cook undisturbed for about 30 seconds until the edges begin to set.
  • Spoon dollops of pizza sauce evenly over the surface of the eggs.
  • Sprinkle the shredded mozzarella cheese generously over the sauce and eggs, also adding a pinch of dried oregano or Italian seasoning if desired.
  • Reduce the heat to low, cover the skillet, and cook for 2-3 minutes until the cheese is melted and bubbly and the eggs are set to your liking.
  • Carefully slide the Pizza Eggs onto a plate and garnish with fresh basil or parsley if desired.

Feel free to customize your Pizza Eggs with your favorite pizza toppings! Just make sure any meats or hard vegetables are pre-cooked or chopped small enough to cook quickly in the skillet.
