  • 4 large eggs
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup pepperoni sliced or diced
  • 1/4 cup sliced mushrooms
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh basil optional, for garnish
  • Red pepper flakes optional, for garnish

Preparation

  • Slice or dice the pepperoni and mushrooms to your desired size.
  • Heat olive oil in a non-stick skillet over medium heat, then sauté the pepperoni and mushrooms until softened and fragrant (3-5 minutes).
  • Whisk eggs with a pinch of salt and pepper until well combined.
  • Pour whisked eggs over sautéed toppings in the skillet and cook for 1-2 minutes until edges begin to set.
  • Spoon pizza sauce and sprinkle mozzarella cheese evenly over the partially set eggs.
  • Reduce heat to low, cover, and cook for 3-5 minutes until eggs are fully set and cheese is melted and bubbly.
  • Garnish with fresh basil or red pepper flakes, if desired, and serve immediately.

Notes

For extra golden, bubbly cheese, transfer an oven-safe skillet to a preheated oven or under the broiler for a minute or two.
