Salad

  • 1 large head mixed greens such as spring mix, arugula, or baby spinach, washed and dried
  • 1 large pomegranate seeds (arils) removed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts or pecans roughly chopped
  • 1/4 cup thinly sliced red onion optional

Dressing

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper to taste

  • Carefully remove the arils from the pomegranate by cutting it in half and tapping the back with a wooden spoon over a bowl.
  • Ensure your mixed greens are thoroughly washed and dried, using a salad spinner if available.
  • In a large bowl, gently combine the dried mixed greens, pomegranate arils, crumbled feta cheese, and toasted nuts, adding red onion if desired.
  • In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, and honey or maple syrup, then season with salt and pepper to taste.
  • Just before serving, drizzle the dressing over the salad ingredients and toss gently to ensure everything is lightly coated, then serve immediately.

Notes

For extra flavor, lightly toast the walnuts or pecans in a dry pan over medium heat for a few minutes until fragrant. You can also add grilled chicken or shrimp for a more substantial meal.
