  • from 8-10 slices Stale bread cubes white bread or sourdough
  • 1/2 cup unsalted butter
  • 1 large yellow onion chopped finely
  • 2 celery stalks chopped finely
  • 2 cloves garlic minced
  • 1 3/4 cups low-sodium chicken or vegetable broth
  • 1 tbsp fresh sage chopped (or 1 tsp dried sage)
  • 1 tbsp fresh thyme chopped (or 1 tsp dried thyme)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C). If using fresh bread, spread the cubes on a baking sheet and toast for 5-7 minutes until lightly golden and dry.
  • In a large pan or Dutch oven, melt the butter over medium heat, then add the chopped onion and celery and cook for 5-7 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Remove the pan from heat and gently mix in the stale bread cubes.
  • Gradually add 1.5 cups of chicken or vegetable broth, mixing gently until the bread is moist but not soggy, adding the remaining broth if necessary.
  • Incorporate the sage, thyme, salt, and black pepper, mixing gently until combined, then taste and adjust seasoning as desired.
  • Transfer the stuffing mixture into a greased 9x13 inch baking dish.
  • Bake uncovered for 20-25 minutes, or until the top is golden brown and crispy; for a wetter stuffing, cover with foil for the initial 15 minutes before uncovering for the remaining time.
  • Allow the stuffing to rest for a few minutes before serving.

Notes

For a wetter stuffing, cover the baking dish with foil for the first 15 minutes of baking, then remove it for the last 5-10 minutes to allow the top to crisp.
